It was a total work weekend. I finished up the website I’ve been laboring over and we’ll see if their are things that need fine tuning. It’s not live but I will definitely announce when it’s up. For doing fun stuff, well, I got to take a late night walk through the park on Saturday and was able to read a bit outside on Sunday. Billy worked on his project of creating a base for our theater chairs.
We are taking a little vacation to see my parents in Florida. It’ll be relaxing, swimming by the pool, going to the beach and eating good food. Speaking of good food, I’ll have another home cooked post on Thursday.

So it’s Friday and the weekend awaits us. It was a rough week at work and more website work when I’d get home. Anyway, I’m not complaining :) I haven’t been browsing online so that leaves me empty handed here with cool links to share. It looks like it’ll be a work weekend for me. Maybe I’ll fit in a nice walk in this brisk weather we’re having, we never know what’s in store. See you here Monday and I’ll share my weekend happenings.

Inspired by this recipe, we came up with this home cooked meal by just adding a little shrimp. Amount used per ingredient, I guess depends on how much you want of each and how large you want this dish to be, so you decide :)
Ingredients:
shrimp, deshelled
tomatoes
yellow squash
garlic
olive oil
Salt and pepper
Directions:
Cut tomatoes and yellow squash into large chunks. Mince the garlic. In a pan, add some oil and semi-cook the shrimp, season with salt and pepper. Remove the shrimp from the pan and set aside. We do this so it doesn’t over cook while all the veggies are cooking down. In the same pan, add a little more oil, throw in the garlic and add the squash. They take a bit longer then the tomatoes so after a couple of minutes, then add the tomatoes. Stir it all up and then add the shrimp. Cook for another minute, season some more with salt and pepper and that’s it.
This is absolutely delicious. We didn’t add the basil and parmesan cheese in this recipe this time but we have in the past. Either way, it’s all yummy!!

A weekend of dinner with friends and some website (not mine) work. Despina and Greg, along with their genius three year old James, came over and we all got to hang out. James was super sweet. Billy made his awesome spaghetti and meatballs. As usual, we ate too much. The sky looked amazing that night, the moon was glowing. Well anyway, are proud now owners of a hoosier cabinet, purchased at a great deal from Housing Works on 17th st. Billy always finds the good stuff.

Here’s a quick salad to put together when there isn’t enough time. Amount used per ingredient, I guess depends on how much you want of each and how large you want the salad to be, so you decide :)
Ingredients:
chickpeas
tomatoes
cucumbers
olives
sprouts of any kind
feta cheese
balsamic vinegar
olive oil
salt & pepper
Directions:
Chop all ingredients to bite size. Whisk together the olive oil and balsamic vinegar. Add everything into a mixing bowl and stir it up. Add salt & pepper to taste and enjoy! Super super easy!
We had this salad with flat bread. Bread is always a good filler. Anyway, we made so much of it that there was enough for lunch the next day where we mixed in a can of tuna for some extra protein.

Happy September! Happy Friday! The end of a really great week, now super ready for the weekend. Work has been a bit crazy. I’m there so much that I haven’t had time for my own work and that a huge issue right now. Even though I can’t do anything about it at this moment, I will enjoy the last bit of summer that’s left. We have a farmers market by us and discovered Flour City Pasta, while working with local farmers they use organic flour and then add organic vegetables, fruits, herbs, and spices to make flavored pasta the traditional ‘Old World’ way. Hungry for baked Italian, Billy came across the Southern Heat Orzo, and a baked sausage paella came to mind thus our recipe below (almost like a baked ziti). I hope you try it and enjoy because it was definitely good eating :)
Ingredients:
1 lb southern heat orzo, cooked al dente
4 tbs extra virgin olive oil
4 sweet Italian sausage links
4 hot Italian sausage links
1 handful chopped baby portabella mushrooms
1/2 cup chopped red pepper
1/2 cup chopped green pepper
1/2 cup chopped red onion
8 cloves chopped garlic
5 cups of shredded mozzarella cheese
1 1/2 cups of shredded parmesan cheese
1 little can of tomato paste
2 little cans of diced tomatoes
4 bay leaves
Pinch of oregano
Sea salt & black pepper to taste
Directions:
Drizzle extra virgin olive oil in cast iron or bake able dish on medium temp.
Brown the sausage links, when almost finished, add chopped portabella mushrooms, red and green peppers, onion and garlic.
Add bay leaves, oregano and season with black pepper & sea salt.
Break up and cut sausage links into bite sized pieces.
Continue cooking under low heat.
Combine all other ingredients, drained diced tomatoes, cooked orzo and mozzarella cheese, mix thoroughly.
Add tomato paste on top of mixture and sprinkle some more mozzarella on top.
Bake in the oven for approximately 30 minutes.
Serves 4-5
