Cod Fillet & Vegetables

Cod Fillet & Vegetables

Oh how we love simple recipes and garlic. Billy created this one using up a lot of left over veggies in the fridge and it was super tasty and healthy. Amount used per ingredient will depend on how hungry you are, so you decide :)

Ingredients:

wild caught cod fillets
carrot
broccoli
scallions
garlic
rosemary
oregano
red pepper flakes
red raddish
tarter sauce
sea salt & pepper
safflower oil

Directions:

Cut up all vegetables into finger length slices. Rinse off the cod fillets, pat dry and season with sea salt, pepper, garlic, rosemary and oregano. Start off by cooking up all the vegetables in an oiled pan, stir occasionally and add in the rest of the ingredients to season. Remove from pan and set aside. In the same pan, add more oil and let it heat up then lay the cod fillets down and let them sear on both sides. Put the pan in the broiler for a few minutes and place the fillets in a serving plate. Again, in the same pan, place the cooked vegetables back in and toss around in the left over fillet juices. Put in the broiler for a few minutes and then place them along side the fillets to serve. We also had some tarter sauce we added to the side for dipping.
