Mediterranian Salad

Here’s a quick salad to put together when there isn’t enough time. Amount used per ingredient, I guess depends on how much you want of each and how large you want the salad to be, so you decide :)

Ingredients:

chickpeas
tomatoes
cucumbers
olives
sprouts of any kind
feta cheese
balsamic vinegar
olive oil
salt & pepper

Directions:

Chop all ingredients to bite size. Whisk together the olive oil and balsamic vinegar. Add everything into a mixing bowl and stir it up. Add salt & pepper to taste and enjoy! Super super easy!

We had this salad with flat bread. Bread is always a good filler. Anyway, we made so much of it that there was enough for lunch the next day where we mixed in a can of tuna for some extra protein.
